Sometimes you can find drawing of rides at the ride manufacturer's websites, but these usually just show dimensions, rather than any mechanical or electrical details, which are probably proprietary. The details of slot machines are probably considered to be company "secrets", as well...

Don't underestimate the power of writing samples! Show writers often sit in on meetings and brainstorms and then write the initial description of the ride experience (which gets edited later on). On some of the rides at Adventure Island in Tampa, FL, I can remember slides that had water only from the top... but these rides also had good down-hill runs... I think that, at the very least, narrative serves as a unifying element. If the audience understands it, it ties the experience together. If they don't, it can be confusing. I don't like rides with drops, so whenever I go to parks, I let people ride the big rides and then ask them how they liked it....

I am really not sure. I know that Disney does not usually accept outside pitches because of legality. I would imagine that Universal is probably much the same.
